My mom, being the 103% genius she is, decided that beef burgers are too "heart attack-y". So, she came up with a very nice replacement ( It honestly tastes better too!)
Bean burgers on whole wheat bun with onion, tomato, and avocado. Side dish of Wacky Mack spinach and carrot pasta made with olive oil, vinegar, dill weed, garlic and a pinch of salt.
As for a recipe, I fly by the seat of my pants and do it from my gut. There are numerous black bean recipes on the Internet to try, but in the end one comes up with what they like best by trial and error.
Basic ingredients:
Black beans (I cook dried ones to save money and store leftover in the freezer, but canned ones will do)
Chickpeas (Not as many of these as black beans in proportion, play with it)
Seasonings of choice (I've used garlic, salt, pepper, worcestershire sauce, taco seasoning...use what you like)
Eggs (one egg if preparing a small amount of bean burger mixture)
Whole wheat flour and cornmeal to thicken the mixture. If you can get hold of it, chickpea flour is better than whole wheat. If your beans were on the dry side, this may not even be needed!
Safflower Oil to fry
Mash cooked beans with seasonings and egg, and add flour and cornmeal mixture. Add only enough that gives you the consistency that will make a patty shape. Cook in a skillet in the oil until it's brown and firm, then flip. Be sure to make the patties thin enough, or else they may not firm up in the middle enough. Enjoy, they're yummy!
