Ingredients:
- 1Tbs butter
- 1/2 Med onion chopped
- 1/4 cup butter
- 1/4 cup flour
- 2 cups half and half
- 2 cups chicken stock
- 1/2lb fresh broccoli
- 1 cup carrots ,shredded
- 1/4 tsp nutmeg
- 8oz. Grated cheddar cheese
- salt and pepper, to taste
Directions:
1) saute onions in butter, set aside
2) cook butter and flour using a whisk over medium heat for 3-5 minutes. Stir in half and half.
3) add chicken stock, then simmer for 20 minutes
4) add broccoli, carrots, and onions. Cook on low heat for 20-25 minutes.
5) add salt and pepper to taste. It can be pureed in blender, but I don't do it. Return to heat, add cheese, and stir in nutmeg.
