Used some things I had sitting in the fridge to make this delicious Mediterranean-style pizza.
You'll need:
-1 Naan, the one I used was about the size of a large dinner plate.
-2 Tbsp. Sun-dried tomato pesto (If you don't have this exact variety of pesto, you can mix 1 tbsp traditional pesto with 1 tbsp minced sun dried tomatoes, stewed tomatoes or fresh tomatoes)
-2 Tbsp. crumbled feta cheese (or substitute 1 Tbsp. bleu cheese)
-2 Tbsp. minced black or green olives (note that green olives will make the pizza quite salty)
-3 oz. sliced prosciutto (About 2 standard slices)
-3/4 cup fresh whole-leaf spinach
Cooking instructions:
Preheat oven to 400F. Place naan on an ungreased cookie sheet or cooking stone. Spread pesto evenly (like pizza sauce on a pizza dough). Sprinkle minced olives, feta cheese, sliced prosciutto and spinach on top of pesto. Salt and pepper to taste. Place pizza on top rack of oven and let bake for 10-12 minutes or until prosciutto begins to stiffen and curl. Cut into slices and serve hot. Serves 2 at 450-500 calories per serving.
